Directions:

• Pat your chicken pieces dry.
• In a large bowl, make an egg wash of 2 eggs and 1/2 cup milk.
• Alternatively, for authentic results, marinate the chicken in buttermilk in the fridge for a few hours or overnight.
• Pour Kentucky-style coating into another large bowl.
• Dip the chicken pieces in the egg wash, then press them into the coating mix.
• Set pieces on a rack over greaseproof paper for 20 minutes.
• Lay the chicken pieces onto a greaseproof paper-lined oven tray.
• Cook at 180 degrees for 30-40 minutes until cooked through.
