Directions:

• Rinse amaranth well through a sieve and move to a pot.
• To 1 cup of amaranth, add 2 cups of water.
• Bring to a boil, cover, reduce the heat and simmer for 18 - 20 minutes.
• Remove from the heat, fluff with a fork and allow to stand.
• Finish it off with something sweet or savoury.
• Can be enjoyed for breakfast, lunch or dinner.

• Reseal or store in an airtight container.
